Humans have been fermenting vinegar for thousands of years, with records of its production dating back to the ancient Egyptians. Vinegar is the next step in the fermentation process: we ferment ours from our green tea kombucha for one hundred and twenty days instead of fourteen. The friendly probiotic bacteria can then convert the small amount of alcohol present in kombucha to acetic acid. See below for suggestions on how to incorporate K4 Kombucha Vinegar into your cooking. Remember, however, that high temperatures in the cooking process may kill off the good probiotic bacteria. If you want to keep those helpful, friendly microbes around, it’s best to add it in at the end, so it just has time to warm through and for the flavours to combine.
